In honor of the new school year, I'd like to share with you a favorite recipe of mine, which was also a big hit at my "Fun & Wholesome Treats for Kids" class. (Of course, great snacks aren't just for kids!)
It's Mushroom Pâté, perhaps a surprising choice for a kids snack but a tried-and true one, and very flavorful, versatile, easy-to-make, and super healthy. What could be better?! I like to use the Mushroom Pâté as a spread for sandwiches or crackers, and my toddler son gobbles it up every time - he even sometimes eats it by the spoonful. My friend Ella, who passed this winning recipe to me (thanks, Ella!), likes to serve it as a dip for veggies at her Super Bowl party.
And a participant from my class had this to say: "I brought the Mushroom Pâté to our family party. Baby Aaron, 10 months, was obsessed with it and couldn't get enough!"
1 tablespoon extra-virgin olive oil
1 pound crimini mushrooms, sliced
2 medium onions, thinly sliced
Unrefined sea salt and freshly ground black pepper
½ cup walnuts (see note)
